Yeayyy, saatnya kukis lagi... kali ini saya posting kukis yang sebenarnya sudah cukup lama ingin saya coba buat, yup palm cheese cookies, nah karena ini versi bola ya, bukan yang versi silinder, jadi namanya diberi embel-embel ball, palm cheese ball cookies. Kukis ini enak kalau saya katakan, renyah ngeprul, dan manisnya pas walaupun dibalut dengan gula palem. Apalagi ada tambahan kejunya. Beberapa hari yang lalu saya beri tester kepada salah satu teman kerja dulu, dan ternyata anaknya suka sekali, jadi besoknya saya beri lagi deh kukis ini. Dan membuat kukis begini tidak pakai ribet ternyata, dan ketika membuat kukis ini saya dibantu Sophie yang membantu saya membalurkan gula palemnya. Lumayan ada yang bantu he he he.. walaupun kalau saya katakan Sophie tidak begitu doyan kukis-kukis emaknya. Secara beberapa hari saya itu sudah buat kukis aneka macam, mulai dari milo doggies cookies, yang saya coba sampai 2 kali, modifikasi resep, lalu masih doggies cookies tapi versi tanpa milo, kemudian saya coba buat nastar, kastengels, palm cheese ball cookies ini, lalu saya buat juga thumbprint cookies, 2 jenis satu dibalur dengan keju parut, satu lagi dibalur oatmeal. Kalau thumbprint cookies adalah favoritnya bapaknya Sophie, kukis lain paling hanya satu dua biji dimakannya. Kalau thumbprint dia yang menghabiskannya he he he... Masih ada beberapa jenis kukis lagi yang masih ingin saya coba, semoga tidak malas he he he.. nah untuk kukis-kukis yang saya buat saya menggunakan butter, kalau memang resepnya pakai butter, kalau ada campuran butter margarin ya saya plek ikut resep, tidak mau memodifikasi resep dulu. Nah di resep ini kan ada menggunakan butter juga dengan komposisi lebih banyak daripada margarin, sempat ketar ketir juga neh bulatan yang sudah cantik apakah akan melebar menjadi bentuk lempengan? ahai ternyata baik-baik saja walaupun menggunakan butter, lega ceritanya. Untuk bulatan kali ini saya timbang hanya beberapa bulatan pertama, berat saya buat 8gr, nah setelah tahu feeling beratnya dan besarnya, selanjutnya bulat-bulat tanpa timbang lagi, hasilnya kurang lebih seragam. Nah kali ini saya gunakan keju edam merk cheesy, kebetulan saya beli keju ini di lotte mart, tumben ada keju cheesy lagi, ya sudah pakai ini saja. Kalau tidak ada keju edam, silakan gunakan keju cheddar atau keju parmesan ya, sesuai dengan resep asli. Kebetulan beberapa hari lalu setelah saya buat kukis ini, eh koko yang punya toko bahan kue info kalau sudah ada keju parmesan, wuih langsung beli deh walaupun harganya lumayan mahal, penasaran juga belum pernah pakai keju parmesan sebelumnya, tapi masih di kulkas, masih disayang-sayang ha ha ha.. Okey deh, berikut resep yang saya buat ya, saya buat hanya setengah resep dari resep di bawah, memang resep di bawah ini tidak pas sekali kalau dibagi dua, dan mungkin kalau buat setengah resep cukup bingung dengan takaran 1 putih telur, hmmm bagi 2 ya, agak repot, jadi saya kira-kira saja, saya gunakan kuning telur dengan sedikit putih telurnya. Masukkan tepung, aduk dengan spatula sampai tercampur rata. Ambil sedikit adonan, jika rajin bisa timbang, saya timbang seberat 8 gr hanya untuk beberapa bulatan pertama, selanjutnya tanpa timbang lagi, bulatkan dan balurkan dengan gula palem, letakkan di loyang beroles margarin tipis, lakukan sampai selesai. saya lakukan membuat bulatan sekitar 10 buah, lalu balurkan sekalian ke gula palem, tata di loyang, lakukan sampai selesai Panggang di oven suhu 140 derajat celcius yang sudah dipanaskan sebelumnya, panggang hingga matang kurang lebih selama 20-25 menit sesuaikan dengan oven masing-masing - saya panggang suhu 150 derajat celcius Keluarkan dari oven, dinginkan dan simpan di wadah kedap udara. Sekarang sih bikin paling cookies klasik aja, yaitu nastar, kastengel. chocochips cookies dan putsal. Untuk pemanasan saya bikin palm cheese cookies. Udah lama sebenarnya pengen bikin cookies ini tapi ya gitu deh hambatannya mah gak jauh-jauh dari males huhuhu. Duluuu banget pernah ngerasain dikasih teman yang jualan cookies ini dan saya langsung suka. Palm cheese cookies ini mirip dengan kastengel, tapi tidak sengeju kastengel ya dan bagian luarnya dibalur gula palem. Enak deh kombinasi asin dan manis legit gula ada 2 resep palm cheese cookies dan pengennya sih saya coba semuanya. Resep yang kali ini saya posting adalah resep dari Sajian Sedap. Selain dibentuk memanjang seperti ini, bisa juga lho dibentuk bulat-bulat seperti nastar. Ntar yaa yang resep kedua saya mau bikin bentuk bulat. Saya menggunakan full butter, tapi boleh juga kalau dimix dengan margarin. Kalo full butter rasanya tentu lebih enak, melted on the mouth tapi kurang kokoh bila dibandingkan yang dimix margarin. Kejunya bisa memakai parmesan, edam atau bahkan cheddar. Nanti hanya akan berbeda rasa asin gurihnya aja kok. Kocok margarin dan kuning telur hingga asal rata aja kurang lebih selama 1 Tambahkan keju parmesan, aduk hingga Masukkan tepung terigu dan susu bubuk dengan cara diayak sambil diaduk Padatkan adonan, pulung memanjang dan potong-potong hingga panjang yang diinginkan. Gulingkan di atas gula palem hingga tertutup rata dan tata di loyang yang sudah dialasi silpat atau dioles tipis Panggang di oven dengan suhu 140'C selama kurang lebih 45 menit atau hingga Angkat, pindahkan ke atas cooling rack dan setelah dingin bisa dimasukkan ke wadah kedap deh, sesuai dengan yang saya mau. Alhamdulillah adek suka bangeet. Padahal bentuknya gak karuan tuh ya, gak ada yang sama hahaha.
